The vintners at Chassenay d’Arce have conserved a rare legacy - a few plots of Pinot Blanc, a long - forgotten grape variety. An unusual and remarkable Champagne.
Assemblage: 
100 % Pinot Blanc from a selection of plots of vines planted between the late 1950s and the early 1970s. Millésime 2008: this cuvee is only produced in exceptional vintages.
Dégustation: 
A pale yellow colour with subtle highlights of grey and green. A generous effervescence and fine bubbles. The bouquet is fresh, elegant, complex and relatively expressive with aromas of blossom, a discreet hint of aniseed, and honey. This wine is light, well-balanced and full-bodied with a touch of warmth from the vintage. The overall effect is coherent and the Pinot Blanc cuvee gives an impression of sincerity. This very fruity wine is suggestive of the freshness of spring.

Cream of asparagus, salmon and almond oil savarin.
